# How to Make:
01 - Line a baking sheet with parchment paper.
02 - In a food processor, combine shredded coconut, melted coconut oil, maple syrup, and vanilla extract. Pulse until the mixture becomes sticky and holds together when pressed.
03 - Scoop approximately 1 tablespoon of the mixture and shape into compact bites or balls. Place them on the prepared baking sheet.
04 - Freeze the coconut bites for 20 to 25 minutes, or until firm.
05 - In a microwave-safe bowl, melt the dark chocolate chips in 20-second bursts, stirring between each interval, until completely smooth.
06 - Dip each frozen coconut bite into the melted chocolate to coat completely, or drizzle chocolate over the top. Return to the baking sheet.
07 - Refrigerate or freeze for 10 minutes more, until the chocolate is completely set.
08 - Transfer to an airtight container and store in the refrigerator for up to 10 days or in the freezer for up to 2 months.
