11 - 1/4 tsp freshly ground black pepper

# How to Make:

01 - Place the sliced cucumber, halved cherry tomatoes, diced avocado, and thinly sliced red onion into a large mixing bowl.
02 - Whisk extra virgin olive oil, fresh lemon juice, sea salt, and black pepper together in a small bowl until emulsified.
03 - Pour the vinaigrette over the vegetables and gently toss to coat evenly.
04 - Sprinkle crumbled feta, chopped parsley, and optional mint over the salad; toss gently one more time.
05 - Serve immediately or refrigerate for up to 30 minutes to enhance flavors and chill.
